VOKASI NEWS – Universitas Airlangga’s Hospitality Program welcomed Staffordshire University students for a hands-on culinary exchange, introducing traditional Indonesian dishes rujak and cendol.

On June 3, 2025, the D4 Hospitality Management Program at Universitas Airlangga (UNAIR) hosted students from Staffordshire University, United Kingdom, in a collaborative culinary guest lecture. The event aimed to provide an immersive cultural and practical experience through the preparation of two iconic Indonesian dishes: rujak and cendol.

International Students Explore Indonesian Cuisine at UNAIR

The session took place in a lively and welcoming atmosphere. Students from both institutions engaged in hands-on learning, guided by UNAIR lecturers and student assistants. Wearing aprons, the visiting students actively participated in the cooking process—chopping fruits, stirring sauces, and piping green jelly for the cendol. Laughter, curiosity, and cultural exchange filled the room throughout the session.

Rujak, a sweet and spicy fruit salad, was introduced as a staple in many Indonesian households. The dish combines tropical fruits like pineapple, mango, and papaya with a bold palm sugar, chili, and tamarind sauce.
Cendol is a popular iced dessert made with green rice flour jelly, coconut milk, and thick palm sugar syrup.
It offers a refreshing treat that suits Indonesia’s warm climate.

Food as a Cultural Bridge

A brief presentation complemented the cooking activities by highlighting the cultural relevance of the featured dishes. Students learned that families and communities commonly serve rujak and cendol during gatherings, traditional events, and festive occasions.

Through this culinary experience, the students gained a deeper appreciation for Indonesian food culture.

One of the visiting students remarked, “It’s delicious, and I never thought fruit could be eaten this way.”

The event exemplified UNAIR’s dedication to global engagement and experiential learning. By integrating culinary arts with cross-cultural interaction, the program emphasized the importance of understanding diversity through shared experiences.
